<!–#html#–><div><span style=”font-size: 1.1em;” data-mce-style=”font-size: 1.1em;”>Mit dem Lockdown-Beschluss für November hat die Bundesregierung bekanntlich das Versprechen verbunden, die betroffenen Gastronomiebetriebe zu entschädigen. Die meisten Bäcker sind von den Maßnahmen allerdings nur im Rahmen einer Teilschließung betroffen – der Thekenverkauf kann ja weitergehen und damit stellt sich die Frage, ob und wie sie in den Genuss der angekündigten Hilfen kommen. Wie uns Daniel Schneider, Hauptgeschäftsführer des Zentralverbandes des deutschen Bäckerhandwerks mitteilte, arbeitet der Verband mit Hochdruck daran, das Bäckerhandwerk unter den neuen Hilfsschirm zu bringen: „Dazu gehört vor allem die Einbeziehung von Teilschließungen (wie in unserer Branche durch das Mischangebot von Gastro- und Thekenverkauf), die Berechnung der Grenze von 50 Mitarbeitern (ab der dann die Hilfen über die Regeln des EU-Beihilferechts laufen würden) sowie mögliche Kompensation von mittelbaren Schäden durch den Wegbruch von B2B-Kunden wie Gaststätten oder Hotels.” Schneider verwies aber auch darauf, dass aus den Ministerien bisher kaum Details oder Entscheidungen bekannt gegeben wurden.</span><br><span style=”font-size: 1.1em;” data-mce-style=”font-size: 1.1em;”><a data-mce-href=”https://baeckerwelt.de/news/soforthilfe-noch-keine-klarheit-fuer-das-baeckerhandwerk-grossbaecker-positionieren-sich/” href=”https://baeckerwelt.de/news/soforthilfe-noch-keine-klarheit-fuer-das-baeckerhandwerk-grossbaecker-positionieren-sich/”>Lesen Sie hier mehr …</a><br></span></div><!–#/html#–>

Da die Fördergrenzen für die Beantragung der Stabilisierungsgrenzen nun gesenkt wurden, können auch Handwerksbetriebe, die einen Teil ihres Umsatzes über gastronomische Angebote oder Catering erzielen, die Hilfe beantragen. Voraussetzung ist, dass mindestens 30 Prozent des Umsatzes normalerweise über den gastronomischen Bereich oder Catering erzielt werden müssen. Für die Beantragung muss der Betrieb einen coronabedingten Liquiditätsengpass nachweisen. Anfang des Jahres hat der Bäcker aus Baden bei Wien mit der Produktion begonnen. Laut den Niederösterreichischen Nachrichten (NÖN) stellte er zu Spitzenzeiten 5.000 bis 6.000 Dosen pro Tag her. Und das Konzept läuft immer noch: Aktuell ist Deiser an einer Ausschreibung zur Belieferung des Bundesheers beteiligt und beliefert rund 550 Geschäfte im Lebensmitteleinzelhandel. Auch immer mehr Privatkunden sind mittlerweile auf die haltbare Backware aufmerksam geworden. Neben dem Roggenvollkornbrot hat der Bäckermeister inzwischen noch ein Eiweißbrot in das Dosenbrot-Sortiment aufgenommen. Wie die NÖN berichten, produziert der Betrieb energieautark: eigener Strom aus Photovoltaikanlagen, Wärme aus dem eigenen Biomasseheizwerk und Wasser aus dem eigenen Brunnen.</span></div><!–#/html#–>

Damit teilt er sich die Geschäftsführung mit seinen hauptamtlichen Kollegen Gunter Hahn und Klaus Burger. Das Vorstandstrio wird ehrenamtlich von Karl-Heinz Hoffmann, Georg Krimphove, Dr. Ewald Oltmann und Martin Reinhardt unterstützt. Im Fokus von Strehles Aufgaben für 2021 soll unter anderem die Analyse der Lager- und Logistikstandorte stehen.</span></div><!–#/html#–>

Januar 2021 aus ihrem jeweiligen Haushalt eine Abgabe von 80 Cent an die EU zahlen. Mit dieser neuen Plastiksteuer reagiert die Brüsseler Politik auf ein Umweltproblem, das vielen Menschen Sorgen macht. Gemeint ist der klimaschädliche Verbrauch fossiler Rohstoffe für Kunststoffverpackungen, die nach kurzer Nutzung zumeist nicht recycelt, sondern unter entsprechendem CO2-Ausstoß verbrannt oder exportiert werden. Ein regelmäßig wiederkehrender Themenschwerpunkt berührt das Verhältnis zwischen spezifischen gesundheitsbezogenen Angaben und sogenannten unspezifischen Hinweisen. Spezifische gesundheitsbezogene Angaben müssen vor ihrer Verwendung zugelassen werden. Unspezifische Angaben dürfen ohne eigenständige Zulassung verwendet werden, wenn ihnen eine zugelassene spezifische Angabe „beigefügt“ ist. Die Möglichkeit der Nutzung unspezifischer Angaben eröffnet dem Lebensmittelunternehmer einen gewissen Spielraum. Maßgeblich begrenzt ist der aber eben durch die Pflicht des „Beifügens“ einer entsprechenden spezifischen Angabe. November 2020, um 16:00 Uhr als Webinar an. Die Guideline ist von einer Arbeitsgruppe ausgewiesener Fachleuten der Branche sowie in zahlreichen Arbeitssitzungen innerhalb der vergangenen acht Jahre erstellt worden. Die Fachleute der Maschinenbauer und Komponentenhersteller, Forschungseinrichtungen und Gesundheitsbehörden sowie auch der produzierenden Betriebe wollen damit das Hygienebewusstsein beim Bau und Betrieb von Produktions- und Verpackungsanlagen fördern. Mit Daniel Monavari konnte die VDB ein Mitglied der Arbeitsgruppe gewinnen, das als Praktiker im Produktionsbetrieb täglich im Rahmen seiner Tätigkeit mit Hygienefragen konfrontiert ist.
